Title: Nelda's Chow Chow

1qtChopped cabbage (1 small)
3cChopped cauliflower (1 md)
2cChopped onion
2cChopped green tomatoes
2cChopped green peppers (4 md)
1cChopped sweet red and yellow
  Bell peppers
3tbSalt
  LIQUID:
2 1/2cWhite vinegar
1 1/2cSugar, or more to taste
2tsDry mustard
1tsTumeric
1/2tsGround ginger
2tsCelery seed
1tsMustard seed

Combine all of the chopped ingredients, sprinkle with the 3 T. of salt, mix lightly, let stand 4-6 hours in a cool place. Drain well.

Combine the ingredients for the liquid, simmer for 10 minutes.

Add the vegetables to the hot liquid, simmer 20-25 minutes. Bring to a boil. Seal with hot, sterilized, jars and lids, leaving 1/4" headspace.

Note: you can use green or ripe tomatoes.
